3-Ingredient Kale + Kiwi-Tini
Today I’m really excited to share another one of my kooky “healthier” cocktails made with only 3 ingredients and takes seconds to make called the Kale + Kiwi-Tini. I love that 2 out of the 3 ingredients are wonderful local goods from the Triangle area of North Carolina. The juice base of this martini comes from one of my all time favorite cold-pressed varieties from Happy + Hale called “Kale Krusader” and the spirit is sweet potato “troop proof” Boots Vodka from Oaklee Distillery. As the weather is warming up, my celebratory weekend drink cravings are moving towards cold, crisp sips over the warm glass of red wine. I love unique martinis, but as I’ve said before, I really hate store-bought mixers high in sugar and preservatives. As you probably know by now, I prefer to make all my recipes using as natural and healthy(ish) ingredients as possible. I enjoy eating healthy and drinking healthy... even in my cocktails, no matter how crazy or oxymoronic that may seem. Ha! Today’s recipe falls right in line with my cooking and mixology principles.
I chose this kale juice because it has a nice crisp, ginger-cucumber “spa-like” taste to it. It really doesn’t have an overpowering kale flavor. Instead, it provides a bright, zippy edge to compliment the tart fruitiness of muddled kiwi. Who would’ve guessed that kale and kiwi would make such a perfect pairing?! The idea for this cocktail actually came to me in my kitchen as I was sipping on this kale juice and looked at the basket of kiwis I bought for homemade smoothie bowls. Mid-sip I thought to myself, “Hm, I wonder how this juice would taste in a smoothie bowl with the kiwi”, which then turned into, “OMG, better yet, how would this be in a COCKTAIL?!”. Thinking about how vibrant and green the drink would be in a glass and how zingy and light it would taste, I quickly found myself pouring and muddling ingredients in a shaker. Turns out, these ingredients go pretty great together, and look super cool in the martini glass.
Ready to be bold and make this one to impress your health-nut pals or dare someone to guess the secret ingredients in this green goodness? Here’s how to make it -
Slice a kiwi in half and scoop out the insides into an empty cocktail shaker. Use a muddle to smash down the kiwi meat into a pulp.
Next, add 3 oz. (or 6 Tbsp.) of Happy + Hale’s “Kale Krusader” juice.
Add 1 shot of Boots Vodka and give all ingredients a healthy stir.
Then, fill the shaker halfway with ice (about ½ a cup) and shake for 10-15 seconds, then pour into a chilled martini glass.
I love to garnish a drink with a few cut slices of kiwi and a small slit to stick onto the rim.
Voila! You’ve got a healthy(ish) cocktail that will give you a little boost with each sip.
*Note, if you or whomever you’re serving the drink to has a weird thing about drink texture, and wouldn’t be down for the kiwi seeds at the bottom, there’s a fix for that. You can strain the cocktail through a fine-mesh strainer as you’re pouring the liquid into a chilled martini glass. Check out my small strainer like the one from this post that would work perfectly for that.
Now just because this cocktail is made with kale juice doesn’t mean having them in excess will make you any healthier, so don't go getting lit in the name of vitamins. However, if you love this flavor combo as much as I do, you can make the second (or third) round of drinks by replacing the vodka with sparkling water for a refreshing non-alcoholic spritzer. You'll still feel fancy AF.
