Frozen Tropical Glow Margarita

The Memorial Day weekend is in front of us and no matter where you’ll be, I hope you have some relaxing down-time to enjoy (hopefully with a great cocktail). If you’re based in the U.S., you may have time planned to hang with family, go on a trip, or simply settle-in to a staycation at home; the most important thing is that we take time to remember and reflect on those who served our country. In the spirit of getting you inspired and then off your phone or computer to soak in the sunshine, I’m sharing a quick post today on this delicious Frozen Tropical Glow Margarita!
I can’t wait for you all to try this new cocktail recipe I whipped up last week and really, really love. It’s the perfect entertaining drink because it’s crazy easy to make in batches of 2 drinks at a time. Just a few ingredients and a few seconds until you’ve poured a delicious signature cocktail to kickoff the summer! Even if you’re working this weekend, keep this recipe in your back pocket for another time, I have a feeling this one could be MVP of the season.
So, I typically don’t go for a frozen, blended cocktail. I really enjoy a classic margarita (or mojarita!) on the rocks with a salt-slathered rim. This time, however, is a different ballgame. As y’all know, I’m currently (and have-been) obsessed with grapefruit and grapefruit juice. I love having grapefruit around for a snack and grapefruit juice for my ACV “Pink Potion” drink. So since I have it on-hand, I decided to use it in this frozen tropical glow margarita. I’m not going to the beach this weekend, but I've been craving something tropical and fruity that reminded me of island times. Another staple in my freezer is frozen pineapple. Pineapples are cute, but they’re also incredibly delicious and good for you, too! I used this prickly and pretty fruit along with the grapefruit juice, some tequila, ice, and a little agave (or about 6 drops of stevia extract, if you'd like to keep it low-sugar) to throw together in the blender and voila! A tropical-tasting, frothy, beautifully glowing cocktail that tastes fantastic and only took a handful of ingredients.
The Full Recipe: (makes 2 Drinks)
- 2 cups of frozen pineapple chunks (it’s even easier if you buy these in the frozen section of the grocery store)
- 1 ½ cups grapefruit juice
- 2 shots of your favorite Tequila
- 1 Tbsp. of agave OR 6 drops of stevia extract for a low-sugar version
- 1 cup of ice
Measure all ingredients into a blender. Blend on high for about 10 seconds or until the ice smooths, just make sure you don’t liquify it! Pour & enjoy - simple as that!
